The other day I was thinking about what the hell I was gonna make for dinner. I wanted something simple but tasty. So I looked in the fridge to see what I had on hand. I had a bowl of assorted tomatoes, olives, had some sausages in the freezer and a whole lot of spices and herbs. So I came up with this little recipe and I hope you will give it a try.
Ingredients
2 large tomatoes
12 baby tomatoes
1 cup of black olives
2 mild Italian sausages
1 tablespoon Italian spices
1 tablespoon Olive oil
1 large yellow onion
5 cloves of garlic
1 tablespoon sugar
1 can of tomato paste
1 cup of water
1 tablespoon corn starch (optional)
Pink Himalayan salt and ground black pepper to taste
Start by finely chopping the onion and garlic in small pieces. Heat up olive oil in a saucepan and toss in the onions and garlic and cook them till translucent. In the meantime dice up the tomatoes into small pieces and then add them to the onion and garlic. Put a lid on the pot and let that cook for about 5 mins.
While that is cooking you can cut the sausages into small pieces. I cooked them separately in a frying pan and then added them to the tomato sauce. Making sure not to add the drippings from the sausages. I then added the olives, spices, sugar and salt and pepper to the sauces and let that cook until it was all blended, about 20 mins.
I let the sauce continue to cook while I put on a pot of water for some pasta. I used spaghetti because that is what I had on hand. Once the pasta was cooked, I took the sauce off the stove and it was ready to go. Hope you give this a try and let me know how yours turns out
