I can't keep banana bread in the house long enough. Everyone seems to love it and it's great for breakfast, as a snack, or even as a dessert. I love making my own banana bread cause not only is it much cheaper than buying it but I know what is in the bread. I'm not eating something I can pronounce which happens more often with all the processed foods out on the market today.
I normally like to go to my local grocery store and use the bananas that are overripe. You can normally find these on a separate trolly in the mornings after they have gone through all the fruit in the produce section of the store. You can get large bags for next to nothing in price. I take as many as I can because once I get home, I put them into the freezer. This way I have bananas on hand ready to make banana bread any time I want. All I do is go to the freezer pick three or four of them and let them thaw out so that they are easier to use.

So here is what you need in order to make this delicious bread that everyone is going to just devour in no time.
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter or margarine (unsalted - if salted omit the 1/4 tsp of salt)
3/4 cup brown sugar
1/2 teaspoon vanilla extract
2 eggs
2 1/3 cups mashed banana
I like to use my Braun mixer. I got this mixer at a second-hand store a few years ago and just love it. In fact, I bought two of them so that if one is busy mixing I can use the other one...lol. Yes, I bake a lot.
Anyways, preheat your oven to 350 degrees while you are making your bread. I start with the butter or margarine and put that into the mixing bowl. Whether you are using a mixer or not I always like to start with margarine or butter. Once that is mixing I put in my sugar and make sure that is mixed well. I then add my eggs, bananas, and vanilla extract and mix well.
Add the flour a bit at a time and the backing soda. Mix it all together and pour into a greased and floured bread pan. Bake for 60-65 mins. This is an estimated time as every oven is different and only you know your oven the best. Once it's baked take it out of the oven and let it cool on the rack until it's cool enough to take it out of the pan.
