Whoever came up with peppermint and chocolate was a genius! What is better than that? Weeeellll, maybe chocolate and peanut butter, but that is for another day. I wanted to challenge myself and make something that I'd never made before. I love peppermint. I grow peppermint plants, I use peppermint oil and I drink peppermint tea. I also love creating things from scratch, so why not make peppermint patties.
Now for those of you that have never made them either and are willing to try this recipe that I found I invite you to do so. Having fun in the kitchen creating new foods that I've never made before I think is fun.
The recipe that I found doesn't seem to be around anymore and I did have to change it to what I had on hand. I've also created a video so you can get an idea as to how I made them.
Let me list the ingredients that you need and you can get started.
Ingredients
4 tbsp half and half cream
1 tbsp melted coconut oil
1 tbsp honey (de-crystallizing honey)
1 1/2 tsp peppermint extract or 1/2 tsp peppermint oil (an affiliate link)
1 tsp fresh lemon juice
1/2 tsp vanilla extract (video on how to make vanilla extract)
3 3/4 cups powdered sugar
1 1/2 cups chocolate wafers (ones for candy making)
Instructions
First mix 2 tbsp half and half cream, coconut oil, honey, peppermint extract or oil, lemon juice, and vanilla extract in a bowl.
Mix in powdered sugar a little at a time. About a cup at a time.
If the dough is not binding together add the remainder of the half and half cream, a tablespoon at a time.
Once the dough is binding together, set dough in between two pieces of parchment paper, or on a silicone mat, and roll out to 1/4 of an inch.
Set dough into the freezer for about 15 minutes.
Select your cookie cutter. I would suggest a simple cutter. I used a 1-inch scalloped cookie cutter, as that is all I had to cut out my peppermint patties with.
Melt your chocolate on the stovetop on the lowest setting or in the microwave.
Once your chocolate is melted and your dough is cold enough, working in batches will be easier than cutting them out and then covering them in chocolate.
Continue gathering the scraps of dough and repeat the process until all the dough is covered with chocolate.
