Whoopie Pie - Cake or Cookie?

The whoopie pie is a  wonderful birthday alternative to cake or cupcakes.  With its rich chocolate taste and its vanilla buttercream filling they may be gone before you know it. Using good quality cocoa for this recipe gives the cakes a richer chocolate flavour. Though whoopie pies can be served on the same day they're made, I think the cakes are much better a day after baking. Of course, they may not even last that long.

The whoopie Pie, also known as the black moon, gob, black-and-white, bob or big fat oreo.  It's considered an American baked product that may be considered either a cookie, sandwich or cake.  It is made of two round pieces of usually chocolate type cake and the middle is filled with some sort of sweet filling.

So, you decided to keep reading.  Here are the ingredients that you will need to make them.


You can use either a mixer like I did or you can mix them by hand.  This is your choice as I don't want you to think that you can't make them without a mixer.

Start by adding the butter and sugar to the bowl and mix them together. Add your egg and your buttermilk.


Now I'm not big on bringing out a bunch of bowls to sift flour or mix flour with cocoa powder.  I'm pretty flat rate with it comes to stuff like that.  The reason being is that I don't have a dishwasher so I like to keep cleaning up to a minimum.

At this point, you need to add your vanilla extract, flour, baking powder, baking soda and cocoa powder.  The cocoa powder I do sift cause it tends to clump up and I don't want big chocolate chunks in my dough when there shouldn't be.


Now that you have your dough ready, it's time to bake.  You want to bake it at 400 degrees for 8 mins. Every oven is different and only you know how your oven works.  The degrees and the time are only a guideline.  In fact, I only bake it at 375 degrees for 8 mins as I use a countertop convection oven.


Once baked they should look like this.  You can make them whatever size you want.  If you are looking to replace a cake, make them bigger.  If you are making to replace cookies, make them smaller.  It all depends on what you are making them for and what size ice cream scoop you using.


While you are baking all your cake/cookie parts. You can go ahead and make your filling. It really didn't take long for them to cool off in order to put the filling in. Let's start by adding the butter and confectioner's sugar, milk and vanilla extract.  Combine all together until it is creamy.


The filling is made and the outer cake/cookie is made it is time to put them all together. Add the filling to a piping bag to make it easier to fill the cake/cookies. Add the to the shell and squeeze them together.
